Basic Pancakes





Basic Pancakes Recipe:

1 cup flour
2 tablespoon sugar
2 tsp baking powder
½ tsp salt
1 cup milk (or enough to make the batter as thick / thin as you like, add it gradually, stirring in one direction only)
2 tablespoon melted butter or cooking oil
1 egg

Directions:
Moisten a paper towel or kitchen towel with a small amount of cooking oil and rub the oily side around inside a pan, to lightly coat it with oil.  Heat the pan to medium heat.
Sift the dry ingredients together in a bowl.   Add the milk, butter (or oil), and the egg.   Blend well, stirring in only one direction (this helps with the batter formation).   **At this point you may add any other ingredients you like, such as chopped fruit, nuts, etc.
Spoon the batter into the hot pan, spreading it out slightly and adding more batter until the pancake is the size you like.  Allow the pancake to cook until the bubbles forming on the top have popped.   Use a spatula to lift the edge of the pancake and make sure the under side is golden first.  Then flip the pancake over carefully.   Cook until the other side is golden.
Remove pancake from pan and spread a slice of butter over the top.   Serve hot with either syrup, fruit, or whipped cream on top.
