Ginger Molasses Cookie Recipe



One of my absolute favorite cookie recipes for Christmas time! Fun to make and really ads warmth and comfort to any holiday spread.

Ginger Molasses Cookie Recipe:

Ingredients:

2 cups flour
2 tsp baking soda
1/2 tsp salt
½ cup (1 stick) unsalted butter, softened
1/3 cup granulated sugar
¼ cup packed brown sugar
1/3 cup molasses
1 egg
1 ½ tsp ground cinnamon
1 tsp ground ginger
Small bowl of coarse/raw sugar for rolling

Directions:
1.    Preheat oven to 375 degrees.
2.    In a medium bowl, sift together the flour, baking soda and salt. Set aside.
3.    In a separate bowl, cream together the butter, granulated sugar and brown sugar until well blended.
4.    Add molasses, egg, cinnamon, and ginger to the butter/sugar mixture. Blend very well.
5.    Add flour mixture to butter/sugar mixture and blend until well incorporated. It might be easier to use your hands.
6.    Roll the cookie dough into balls slightly smaller than golf balls. Roll each ball in coarse/raw sugar and place on a baking sheet, lined with parchment paper. Make sure the sugar side is facing up. Keep dough balls about 2 inches apart.
7.    Bake for 8-10 minutes. Rotate the baking sheets halfway through to ensure even baking.
8.    Remove from oven and transfer to a wire rack to cool. Enjoy!
